Elderflower, Sambucus nigra, is a member of the Viburnaceae family, well known for both its fruit and flowers. The fruit is used for cordials, but must be cooked to breakdown toxic substances. The flowers have a wonderful scent and are a familiar sign of early summer. They are often collected, dipped in batter and fried as a spring treat. The leaves of the elder have a pungent smell and the stems are hollow and used to help start a fire by blowing air into it. Elder energetics are cooling, bitter and sweet. Magically, Elder is associated with the fae and permission should be sought before cutting an Elder down. On midsummer night, if you were to stand by an elder tree, it was said that you would see the Faery King pass by. because of this, elder has become a symbol of negativity in the christian church. The stems are also used to make magical pipes and is considered to be protective.
Elder is a shrubby tree that grows rapidly in hedgerows and open spaces and will regenerate quickly.

Suggested use: Add 1 to 2 teaspoons per mug of freshly boiled and slightly cooled water, allow to steep for 5 to 10 minutes and strain to remove herbs.
